CLAIMS

1. A method of processing a garlic comprising:
preliminary treating a raw garlic to semi-dry and to saccharify the raw garlic at a temperature of about 55 to about 75°C such that the raw garlic contains about 30 to about 50% of moisture by weight;
steaming the preliminary-treated raw garlic at a temperature of about 90 to about 110°C for about 30 to about 60 minutes; and
drying the steamed raw garlic at a temperature of about 55 to about 75°C to obtain the garlic containing about 15 to about 25% of moisture by weight.

2. The method of claim 1, further comprising secondarily drying the garlic that contains about 15 to about 25 % of moisture by weight at a temperature of about 55 to about 75 °C such that the garlic contains about 6 to about 7% of moisture by weight.

3. The method of claim 1, further comprising,
compressing the garlic that contains about 15 to about 25 % of moisture;
secondarily drying the compressed garlic at a temperature of about 55 to about 75 °C such that the garlic contains about 6% to about 7 % of moisture by weight; and
pulverizing the garlic to give powdered garlic.
