(FR) La présente invention vise à concevoir un filet de poisson grillé ayant une texture moelleuse telle que même des personnes ayant des difficultés de mastication peuvent le mâcher suffisamment et qui n'a pas de goût ni d'odeur déplaisant(e), et un procédé de production de celui-ci. L'invention concerne ainsi un filet de poisson grillé ayant une texture moelleuse telle que, lors de l'utilisation d'une bille métallique de 15 mm de diamètre dans les conditions de température de consommation, une charge de 350 gf ou moins est nécessaire pour obtenir une profondeur d'enfoncement de 3 mm et qui n'a pas de goût ni d'odeur déplaisant(e), et son procédé de production.
(JA) 咀嚼困難者であっても十分に咀嚼できる軟らかさを有するとともに、異味、異臭のない魚の軟らか焼成品とその製造方法を提供することを課題とし、喫食時の温度条件下において、直径15mmの金属球を3mm押し込むに必要な荷重が350gf以下という軟らかさを有するとともに、異味、異臭のない魚の切り身の軟らか焼成品とその製造方法を提供することよって上記の課題を解決する。
