Claims

1. An isolated microbial enzyme which is capable of converting α-solanine.

2. An isolated microbial enzyme according to claim 1, wherein the enzyme is capable of converting α-solanine into β2-solanine.

3. An isolated microbial enzyme according to claim 1 or 2, wherein the enzyme is obtainable from the microorganism which is deposited as CBS 773.97.

4. The microorganism deposited as CBS 773.97 or a derivative thereof obtainable by mutation or genetic transformation.

5. An enzyme preparation comprising an enzyme according to claim 1-3.

6. An enzyme preparation according to claim 5 wherein the enzyme preparation further comprises AR2000® or Cytolase®PCL, or an active fraction thereof.

7. A process for converting α-solanine which process comprises contacting the α-solanine with an isolated enzyme according to claim 1-3, a suspension of the microorganism according to claim 4, or an enzyme preparation according to claim 5 or 6.

8. A process according to claim 7, wherein the α-solanine is contacted with an isolated enzyme according to claim 1-3 or with a suspension of the microorganism according to claim 4 or with an enzyme preparation according to claim 5 or 6 in combination with a rhamnosidase or galactosidase activity exhibiting enzyme.

9. The use of a microbial enzyme or enzyme preparation for the conversion of α-solanine.

10. The use of a microbial enzyme or enzyme preparation for the conversion of α-solanine or α-solanine and α- chaconine into solanidine.

11. The use according to claim 9 or 10, wherein the α- solanine or α-solanine and α-chaconine are present in a vegetable waste stream, a food product, a feed product or a beverage.

12. A process for converting a substance comprising α- solanine and α-chaconine into a less toxic substance by converting α-solanine and α-chaconine into less toxic compounds, which process is characterised in that a microbial enzyme preparation is used for the conversion of α-solanine and α-chaconine.

13. A process according to claim 12, which is characterised in that the microbial enzyme preparation is an enzyme preparation according to claim 5 or 6.

14. A process for making an edible product from a vegetable source known to comprise glycoalkaloids, which process is characterised in that the vegetable source is contacted with an enzyme according to claim 1-3, or an enzyme preparation according to claim 5 or 6.

15. The use of AR2000® or a fraction thereof for the generation of solanidine.
