A method for producing bacteriocin and propanoic acid based on a xylose mother liquor raffinate, comprising the steps of: step one, culturing a propionibacterium shermanil seed; step two, inoculating the obtained propionibacterium shermanil seed liquid into a modified SLB culture medium or a modified MRS culture medium, performing anaerobic culture on same, separating the produced propanoic acid from a fermentation system during the anaerobic culture process, and collecting same; 1.5% of glucose being replaced with 10%-40% of xylose mother liquor raffinate in the modified SLB culture medium; 20 g of glucose being replaced with 100-400 g of xylose mother liquor raffinate in the modified MRS culture medium; and step three, centrifuging a fermentation broth and collecting the supernatant liquid. The xylose mother liquor raffinate is reused and replaces the common carbon source glucose as a carbon source in microbial fermentation. Propionibacterium shermanil can be normally fermented in a culture medium in which the xylose mother liquor raffinate is used as a carbon source to produce the bacteriocin and the propanoic acid. The fermentation broth containing the bacteriocin still has a bacteriostatic effect.
