The invention is a continuous process, which has purpose to bring the cell membrane in raw meat cells into solution, so that there is opened for access to the salt soluble proteins, which are situated inside the cells. The salt cannot pass the membrane, before it has been broken down, something that takes many hours, whereas by microwave treatment the break down happens instantly. Brine is injected thereafter into the raw meat in a dense pattern, such that the raw meat is even salted. For total dissolution of the cell membrane the raw meat is in the end treated with ultrasound, which creates lysis, which opens the cell membrane to the salt soluble proteins. This to secure a total dissolution of the cell membrane and the intracellular proteins. The invention is suitable for the meat and fish industry, where there today is applied long salting processes. The invention solves the problem of fast access of salt to the salt soluble proteins, and there do not exist any known techniques for solving this problem.
