Abstract
(EN)

PURPOSE: To obtain a new reversible thermal gelling agent which is of a thermal phase transition type, gelating when heated and solating when cooled, by enzymatically partially decomposing side-chain galactose units of galactoxyloglucan.

CONSTITUTION: This reversible thermal gelling agent is produced by enzymatically partially decomposing side-chain galactose units of a galactoxyloglucan. The gelling agent having a degree of removal of side-chain galctose units of 30-65% is pref. Tamarind seed gum is more pref. as the galactoxyloglucan. Food cosmetics, and toiletries contg. the agent are still more pref.

【構成】 本発明は、ガラクトキシログルカンの側鎖ガ
ラクトースを酵素的に部分分解して製造される可逆的熱
ゲル化剤およびその用途である。
このゲル化剤は、加熱
するとゲル化し、冷却するとゾル化し、そのゲル化条件
における熱挙動が寒天,κ-カラギーナン,ゼラチンな
どの通常のゲル化剤のそれとは逆であるので、新しいタ
イプのゲル化剤である。


【効果】 本発明の可逆的熱ゲル化剤は加熱時ゲル化
し、しかもそのゲルの強度が大きく、かつ安定であるの
で、新しいタイプのゲル状食品、飲料、スープ、化粧品
や芳香剤などのトイレタリー製品への利用が可能であ
る。
