Abstract
(EN)

PROBLEM TO BE SOLVED: To provide a polyphenol-containing beverage which hardly exhibits the astringent taste or astringency derived from polyphenol, even with a high content of polyphenol exhibiting astringent taste or astringency.

SOLUTION: A Siraitia grosvenorii extract as an astringent taste masking agent is blended into a polyphenol-containing beverage at a concentration causing no feeling of sweetness, so that the astringent taste can be suppressed without spoiling the flavor of tea. The masking effect can be particularly enhanced in combination use of a fruit-based flavor, a non-alcoholic beverage flavor, and a sugar flavor.

【課題】本発明は、渋味や収斂味を呈するポリフェノールを高濃度で含有させても、これら物質に由来する渋味や収斂味を呈しにくいポリフェノール含飲料を提供する。
【解決手段】ポリフェノールを含有する飲料に、羅漢果抽出物を、苦渋味マスキング剤として用い、飲料に甘味を感じない濃度で配合することにより、茶の風味を損なうことなく、苦渋味を抑制でき、特に、フルーツ系フレーバー、嗜好飲料系フレーバー及びシュガーフレーバーとの併用によりマスキング効果が向上する。
