Abstract

PROBLEM TO BE SOLVED: To provide a method for producing phospholipid with phospholipase D, by which the target phospholipid can simply be obtained in a high yield without using an organic solvent and calcium.

SOLUTION: This method for producing the phospholipid, characterized by sufficiently mixing the phospholipid of raw material, a receptor having a hydroxy group, phospholipase D and water in the absence of an organic solvent to homogenize the mixture, and then enzymatically reacting the homogenate at 15 to 65C.

【課題】 ホスホリパーゼDを用いたリン脂質の製造を
行う場合に、有機溶媒やカルシウムを用いることなく、
簡便かつ高収率に目的とするリン脂質を得る。


【解決手段】 原料リン脂質と、水酸基を有する受容体
と、ホスホリパーゼDと、水とを、有機溶媒を使用せず
に混合して充分に均質化して、15℃~65℃にて酵素
反応を行う。
