The invention relates to the technical field of production and preparation of phosphatidylserine, in particular to a method for quickly and stably preparing phosphatidylserine for foods. The method comprises the following steps: A, dispersing phospholipase D in an ionic liquid, so as to obtain a mixed system; B, adding soybean lecithin and serine into the mixed system, and performing standing, so as to obtain the phosphatidylserine. According to the method, by use of the ionic liquid, the phospholipase is high in catalytic activity and stability to temperature; the soybean lecithin and the serine are added into the ionic liquid, and then an emulsifier is also added; via ultrasonic treatment, the phospholipase D can be quickly and catalytically synthesized in the ionic liquid, therefore, the phosphatidylserine is formed; the reaction time is short, and the yield is high. The product is suitable for being added into health foods such as milk and drink and has outstanding effects of preventing low cognitive ability and relieving the fatigue.

本发明涉及磷脂酰丝氨酸的生产制备技术领域,具体的涉及一种快速稳定制备食品用磷脂酰丝氨酸的方法,包括以下步骤:A、将磷脂酶D分散于离子液体中,得到混合体系;B、将大豆卵磷脂、丝氨酸加入混合体系中,静置,得到磷脂酰丝氨酸;本发明通过离子液体使得酶具有良好的催化活性和对温度的稳定性,将大豆卵磷脂、丝氨酸加入离子液体,加入乳化剂,通过超声波处理,磷脂酶D在离子液体中快速催化合成,形成磷脂酰丝氨酸,其反应时间短,得率高。产品适合用于牛奶、饮料等健康食品中添加,对预防认知力低下、缓和疲劳等有显著效果。
