Abstract
(EN) Provided is a denatured protein material having all the characteristics of a) and b): a) according to the result of measuring molecular weight distribution, the area ratio for portions where the molecular weight is at least 2,000 Da and less than 20,000 Da is 45-90%; and b) when 250 mM of guanidine hydrochloride is added to an aqueous solution of denatured protein material having a crude protein concentration of 0.1%, the solution does not become cloudy, and when 2 M of ammonium sulfate is added, the solution becomes cloudy.
(FR) L'invention concerne un matériau de protéine dénaturée ayant toutes les caractéristiques a) et b) : a) en fonction du résultat de la mesure de la distribution des poids moléculaires, le rapport de surface des parties où le poids moléculaire est d'au moins 2 000 Da et inférieur à 20 000 Da est de 45 à 90 % ; et b) lorsque 250 mM de chlorhydrate de guanidine sont ajoutés à une solution aqueuse de matériau de protéine dénaturée ayant une concentration en protéine brute de 0,1 %, la solution ne devient pas trouble, et lorsque 2 M de sulfate d'ammonium sont ajoutés, la solution devient trouble.
(JA) 下記a)~b)の全特徴を有する変性タンパク質素材: a)分子量分布の測定結果で、2,000Da以上20,000Da未満の面積比率が45~90%、及び b)粗タンパク質濃度0.1%の変性タンパク質素材の水溶液に250mM塩酸グアニジンを添加した場合に白濁せず、2M硫酸アンモニウムを添加した場合に白濁する、を提供する。
