Abstract
(EN) Described is a method of forming a biodegradable and/or edible tableware that has a three dimensional shape in a two-step cooking process by first partially cooking a dough, that contains at least a flour and gelling agent, in a mould (subject to pressure and heat) and then baking the moulded tableware. The dough may include a sugar, and if present, is present at a ratio of the gelling agent to the sugar from 0.8: 1 to 1:0.8. The dough may include a vegetable oil as the gelling agent and if the gelling agent is a vegetable oil, the dough includes the addition of water.
(FR) Un procédé de formation d'une vaisselle biodégradable et/ou comestible qui a une forme tridimensionnelle dans un procédé de cuisson en deux étapes par cuisson partielle d'une pâte, laquelle contient au moins une farine et un agent gélifiant, dans un moule (soumis à la pression et à la chaleur) puis par cuisson de la vaisselle moulée. La pâte peut comprendre un sucre, et, le cas échéant, est présent selon un rapport de l'agent gélifiant au sucre de 0,8 : 1 à 1 : 0,8. La pâte peut comprendre une huile végétale en tant qu'agent gélifiant et si l'agent gélifiant est une huile végétale, la pâte comprend l'ajout d'eau.
