Abstract
(EN) The present invention addresses the problem of providing a fruit juice-containing undiluted sake and a fruit juice-containing alcoholic beverage that have the fresh and flowery flavor of freshly-squeezed citrus juice. A method for producing the fruit juice-containing undiluted sake provided by the present invention has: (a) a step for obtaining a liquid mixture having an alcohol content of 15-55% v/v by mixing a fruit juice, which was obtained from a citrus fruit by using a juice extractor, with alcohol within 30 hours of extraction; and (b) a step for storing the liquid mixture in an environment of 0°C or less.
(FR) La présente invention a pour but de fournir un saké non dilué contenant du jus de fruit et une boisson alcoolisée contenant du jus de fruit ayant un arôme frais et floral de jus d'agrumes fraîchement pressé. Le procédé de production du saké non dilué contenant du jus de fruit de la présente invention comprend les étapes suivantes : (a) obtention d'un mélange liquide ayant une teneur en alcool de 15 à 55 % v/v en mélangeant un jus de fruit, obtenu à partir d'un agrume en utilisant un extracteur de jus, avec de l'alcool dans les 30 heures suivant l'extraction ; et (b) stockage du mélange liquide dans un environnement à 0°C ou moins.
(JA) 本発明の課題は、絞りたての柑橘類果汁が有するフレッシュで華やかな香味を有する果汁含有原酒および果汁含有アルコール飲料を提供することである。 本発明によって提供される果汁含有原酒の製造方法は、(a)搾汁機を用いて柑橘類から得た果汁を、搾汁から30時間以内にアルコールと混合して、アルコール度数が15~55v/v%の混和液を得る工程と、(b)混和液を0℃以下の環境で保管する工程と、を有する。
