Abstract
(DE) Die vorliegende Erfindung betrifft eine aktivierbare entesterte Fruchtfaser und ein Verfahren zu ihrer Herstellung. Die Erfindung betrifft zudem die Verwendung der entesterten Fruchtfaser als Verdickungs- oder Strukturmittel in verschiedenen industriellen Erzeugnissen. Weiterhin betrifft die Erfindung eine Mischung der aktivierbaren entesterten Fruchtfaser mit einem löslichen Pektin. Letztendlich betrifft die Erfindung ein Lebensmittelerzeugnis, Futterprodukt, Nahrungsergänzungsmittel, Getränk, kosmetisches Produkt, pharmazeutisches Produkt oder Medizinprodukt, das unter Verwendung der erfindungsgemäßen entesterten Fruchtfaser hergestellt worden ist.
(EN) The present invention relates to an activatable, deesterified fruit fiber and to a method for the production thereof. The invention also relates to the use of the deesterified fruit fiber as a thickening or structuring agent in various industrial products. The invention further relates to a mixture of the activatable deesterified fruit fiber and a soluble pectin. The invention finally relates to a food product, a feed product, a food supplement, a beverage, a cosmetic product, a pharmaceutical product or a medical product, which has been produced using the deesterified fruit fiber according to the invention.
(FR) La présente invention concerne une fibre de fruit désestérifiée activable et son procédé de production. L'invention concerne également l'utilisation de la fibre de fruit désestérifiée comme agent épaississant ou structurant dans divers produits industriels. L'invention concerne en outre un mélange de la fibre de fruit désestérifiée activable et d'une pectine soluble. L'invention concerne enfin un produit alimentaire, un produit d'aliment pour animaux, un complément alimentaire, une boisson, un produit cosmétique, un produit pharmaceutique ou un produit médical, qui a été produit à l'aide de la fibre de fruit désestérifiée selon l'invention.
