Abstract
(EN) The invention relates to a process for recovering at least one fractional substance from vapours during the alcohol reduction of a beverage, and a fractional substance recovery device for carrying out the process, in which an alcoholic beverage to be reduced in alcohol content is supplied to a degasser (62) of a fractional substance recovery device (60), in which vapours are removed from the degasser (62) and the alcoholic beverage passed through the degasser (62) is supplied to a device (10) for alcohol reduction, in which the vapours are fed to a plurality of fractional condensation stages (66, 67, 68) which follow one another in series and in which at least one fractional substance is separated from the vapours under pressure and/or temperature, and in which the fractional substances separated in the respective fractional condensation stage (66, 67, 68) are collected in a collecting container (84 to 89) or are fed to an inoculation station (19), through which the separated fractional substances are fed in metered quantities to an alcohol-reduced drink.
(FR) L'invention concerne un procédé de récupération d'au moins une substance fractionnaire à partir de vapeurs lors de la réduction d'alcool d'une boisson, ainsi qu'un dispositif de récupération de substances fractionnaires pour la mise en œuvre du procédé, où une boisson alcoolique à réduire en teneur en alcool est amenée à un dégazeur (62) d'un dispositif de récupération de substances fractionnaires (60), où des vapeurs sont éliminées du dégazeur (62) et la boisson alcoolique passée à travers le dégazeur (62) est amenée à un dispositif (10) de réduction d'alcool, les vapeurs étant amenées à plusieurs étages de condensation fractionnaire (66, 67, 68) qui se succèdent en série et au moins une substance fractionnaire étant séparée des vapeurs sous pression et/ou température, et les substances fractionnaires séparées dans l'étage de condensation fractionnaire respectif (66, 67, 68) étant recueillies dans un récipient collecteur (84 à 89) ou amenées à un poste d'inoculation (19), via lequel les substances fractionnaires séparées sont amenées en quantités dosées à une boisson à teneur réduite en alcool.
