Abstract
(EN) An apparatus and method for heating or cooling food items in liquid, the apparatus comprising a first heat exchange unit (2) having a chamber (2), a heat exchange device (8) and connections for feeding a first heat exchange medium to and from the chamber through the heat exchange device. The apparatus further comprises a second heat exchange unit (4) having one or more spiral-shaped channels (5) for transporting food items in a second heat exchange medium (6) through an in-feed structure and an out-feed structure, the second unit comprising means for rotating the one or more channels around an axis in the chamber of the first heat exchange unit, and wherein the one or more channels of second heat exchange unit are at least partially submerged in the first heat exchange medium in the chamber of the first heat exchange unit.
(FR) L'invention concerne un appareil et un procédé pour chauffer ou refroidir des aliments dans un liquide, l'appareil comprenant une première unité d'échange de chaleur (2) ayant une chambre (2), un dispositif d'échange de chaleur (8) et des raccordements pour acheminer un premier milieu d'échange de chaleur vers et depuis la chambre dans le dispositif d'échange de chaleur. L'appareil comprend en outre une seconde unité d'échange de chaleur (4) ayant un ou plusieurs canaux en forme de spirale (5) pour transporter des aliments dans un second milieu d'échange de chaleur (6) par l'intermédiaire d'une structure d’entrée et d'une structure de sortie, la seconde unité comprenant des moyens pour faire tourner ledit canal autour d'un axe dans la chambre de la première unité d'échange de chaleur, et ledit canal de la seconde unité d'échange de chaleur étant au moins partiellement immergé dans le premier milieu d'échange de chaleur dans la chambre de la première unité d'échange de chaleur.
