Disclosed is a method for preparing a straight-chain dextrin, which falls within the technical field of the chemical modification of starch. The method involves using a declustering and complexing action of ultrasonic waves to decluster starch chains and complex an amorphous region and an emulsifier; then, using alpha-amylase and pullulanase for compound enzymolysis, wherein because a complex formed by the amorphous region and the emulsifier is resistant to enzymolysis, the amorphous region is protected from being destroyed; and finally, separating dextrins of different molecular weights by means of a membrane separation method, so that straight-chain dextrin products with a low polydispersity coefficient and a narrow molecular weight distribution weight are obtained. The efficiency of comprehensive utilization of starch is increased to 70% or more, and the rate of complexing reaches up to 65%.

Est divulgué un procédé de préparation d'une dextrine à chaîne droite, qui appartient au domaine de la modification de l'amidon. Le procédé implique l'utilisation d'une action de dégroupage et de complexion d'ondes ultrasonores pour dégrouper des chaînes d'amidon et complexer une région amorphe et un émulsifiant ; puis, l'utilisation d'alpha-amylase et de pullulanase pour une enzymolyse combinée, un complexe formé par la région amorphe et l'émulsifiant étant résistant à l'enzymolyse, la région amorphe étant protégée contre la destruction ; et finalement la séparation des dextrines de différents poids moléculaires au moyen d'un procédé de séparation membranaire, de telle sorte que des produits de dextrine à chaîne droite à faible coefficient de polydispersité et un poids de distribution de poids moléculaire étroit soient obtenus. L'efficacité d'utilisation complète de l'amidon est augmentée à 70% ou plus, et le taux de complexion atteint jusqu'à 65%.

本发明公开了一种直链糊精的制备方法,属于淀粉化学改性技术领域。所述方法是利用超声波解簇与络合作用使淀粉链解簇、无定型区与乳化剂络合,再通过α-淀粉酶和普鲁兰酶复合酶解,因无定形区与乳化剂形成络合物耐酶解,从而保护无定形区不被破坏,最后通过膜分离的办法使不同分子量的糊精分开,从而获得多分散性系数低、分子量分布窄的直链糊精产品;提高淀粉综合利用效率至70%以上,络合率高达65%。
