The present invention relates to a method of making a cold cut meat analogue, said method comprising: mixing a combination of two or more plant protein isolates, wheat gluten and optionally other ingredients, wherein the % (w/w) dry weight ratio of the combination of two or more plant protein isolates to wheat gluten ranges from 65:35 to 85:15, and wherein at least one plant protein isolate is derived from pea and/or at least one plant protein isolate is derived from soy; adding water and mixing to form a dough; extruding the dough by wet extrusion; cooling; and optionally cutting. A cold cut meat analogue made by the method of the invention is also provided.

La présente invention concerne un procédé de production d'un succédané de viande froid découpé, ledit procédé comprenant : le mélange d'une combinaison d'au moins deux isolats de protéine végétale, de gluten de blé et éventuellement d'autres ingrédients, le rapport en poids sec en % (poids/poids) de la combinaison d'au moins deux isolats de protéine végétale au gluten de blé allant de 65:35 à 85:15, et au moins un isolat de protéine végétale étant dérivé du pois et/ou au moins un isolat de protéine végétale étant dérivé du soja ; l'ajout d'eau et le mélange pour former une pâte ; l'extrusion de la pâte par extrusion humide ; le refroidissement ; et facultativement la découpe. L'invention concerne également un succédané de viande froid découpé obtenu par le procédé selon l'invention.
