Abstract

A food sweetener is a powder having an average particle size of at most 1,500 μm and comprising pulverised dried fruit and/or vegetable. The powder comprises, on a dry basis, at least 30%wt and at most 70%wt of total sugars and has a moisture content of from 1 to 6% by weight. Chocolate products incorporating the powder are disclosed as are methods of producing the powder.

Un édulcorant alimentaire est une poudre ayant une taille moyenne de particule d'au plus 1500 pm et comprenant un fruit et/ou un légume séché pulvérisé. La poudre comprend, sur une base sèche, au moins 30 % en poids et au plus 70 % en poids de sucres totaux et a une teneur en humidité de 1 à 6 % en poids. L'invention concerne également des produits à base de chocolat incorporant la poudre, ainsi que des procédés de production de la poudre.
