CLAIMS

What is claimed is:

1. A process for isolating phospholipids from acid whey, the process comprising:

a. exposing acid whey to filtration, thereby enriching for phospholipids;

b. solubilizing and removing proteins and caseins; thereby isolating phospholipids from acid whey.

2. The process of claim 1 whereby the acid whey is derived from cottage cheese.

3. The process of claim 2, wherein the cottage cheese is filtered to remove curds from the acid whey.

4. The process of claim 1, wherein the acid whey is exposed to diafiltration and/or ultrafiltration in step a).

5. The process of claim 4, wherein the ultrafiltration is carried out using a membrane with a 50 kDa molecular weight cutoff.

6. The process of claim 1, wherein after filtration, a retentate is obtained, wherein the retentate comprises concentrated caseins, whey proteins, phospholipids, and residual fat.

7. The process of claim 6, wherein after filtration, the retentate is exposed to

centrifugation.

8. The process of claim 7, wherein after centrifugation, supernatant comprising water and at least 60% of proteins present in whey are removed from precipitate.

9. The process of claim 8, wherein said precipitate comprises residual caseins,

phospholipids, and residual fat.

10. The process of claim 9, wherein proteins and caseins are removed from the

precipitate via chemical solubilization.

11. The process of claim 10, wherein tri-sodium citrate or ammonium hydroxide is used to remove aggregate proteins, and solubilize caseins which remain in supernatant.

12. The process of claim 11, wherein after exposure to tri-sodium citrate or ammonium hydroxide, centrifugation is used to precipitate out protein and other solid substances as aggregates.

13. The process of claim 11, wherein remaining supernatant comprising soluble caseins, low molecular weight aggregates, phospholipids, and residual fat is retained.

14. The process of claim 10, wherein ammonium hydroxide is used to remove

solubilized caseins by further maintaining them in solution.

15. The process of claim 14, wherein after treatment with ammonium hydroxide,

ultrafiltration is carried out.

16. The process of claim 15, wherein said ultrafiltration and/or diafiltration removes solubilized caseins and protein aggregates, citrate, and hydroxide.

17. The process of claim 1, wherein the process is carried out without heat.

18. The process of claim 17, wherein the process is carried out below 10°C.

19. A product obtained by the process of claim 1.

20. The product of claim 19, wherein the product is a powder.

21. The product of claim 20, wherein the product comprises 8-20% phospholipids.

22. The product of claim 20, wherein the product comprises 15-25% protein.

23. The product of claim 20, wherein the product comprises 15-25% fat.

24. The product of claim 20, wherein the product is freeze dried or sprayed.

25. The product of claim 19, wherein phospholipids of the product comprise proteins belonging to the milk fat globule membrane (MFGM).

26. The product of claim 25, wherein said MFGM comprises xanthine oxidase and

lactadherin.

27. The product of claim 19, wherein said product has not been exposed to heat.

28. A process for isolating phospholipids from a milk byproduct, the process comprising:

a. filtering the milk byproduct;

b. exposing the milk byproduct to filtration;

c. exposing filtered milk byproduct of step b) to chemical solubilization;

d. filtering the product of step c), thereby isolating phospholipids.

29. The process of claim 28, wherein the byproduct is exposed to diafiltration and/or ultrafiltration in step a).

30. The process of claim 29, wherein the ultrafiltration is carried out using a membrane with a 50 kDa molecular weight cutoff.

31. The process of claim 28, wherein after filtration, a retentate is obtained, wherein the retentate comprises concentrated caseins, whey proteins, phospholipids, and residual fat.

32. The process of claim 31, wherein after filtration, the retentate is exposed to

centrifugation.

33. The process of claim 32, wherein after centrifugation, supernatant comprising water and whey proteins is removed from precipitate.

34. The process of claim 33, wherein said precipitate comprises caseins, phospholipids, and residual fat.

35. The process of claim 28, wherein in step c), tri-sodium citrate is used to remove aggregate proteins.

36. The process of claim 35, wherein after exposure to tri-sodium citrate, centrifugation is used to precipitate out protein aggregates.

37. The process of claim 36, wherein remaining supernatant comprising soluble caseins, low molecular weight aggregates, phospholipids, and residual fat is retained.

38. The process of claim 28, wherein in step c), ammonium hydroxide is used to remove solubilized caseins.

39. The process of claim 38, wherein after treatment with ammonium hydroxide,

ultrafiltration is carried out.

40. The process of claim 39, wherein said ultrafiltration removes solubilized caseins, citrate, and hydroxide.

41. The process of claim 28, wherein said milk byproduct comprises buttermilk, sweet whey, acid whey, or butter.

42. The process of claim 28, wherein the process is carried out without heat.

43. The process of claim 42, wherein the process is carried out below 30°C.

44. A product obtained by the process of claim 28.

45. The product of claim 44, wherein said product is in the form of a powder.

46. The product of claim 45, wherein the product comprises 8-20% phospholipids.

47. The product of claim 45, wherein the product comprises 15-25% protein.

48. The product of claim 45, wherein the product comprises 15-25% fat.

49. The product of claim 45, wherein the product is freeze dried or sprayed.

50. The product of claim 44, wherein phospholipids of the product comprise proteins belonging to the milk fat globule membrane (MFGM).

51. The product of claim 44, wherein said product has not been exposed to heat.
