Disclosed herein is a process for isolating phospholipids from milk by-products, such as acid whey, the process comprising: a) exposing milk by-products to filtration, thereby enriching for phospholipids; and b) solubilizing and removing whey proteins and caseins; thereby isolating phospholipids from the milk by-product. Also disclosed are products produced by this method.

L'invention concerne un procédé d'isolement de phospholipides à partir de sous-produits laitiers, tels que du lactosérum acide, le procédé consistant : a) à exposer les sous-produits laitiers à une filtration, ce qui permet d'enrichir les phospholipides; et b) à solubiliser et à éliminer les protéines et les caséines du lactosérum, ce qui permet d'isoler les phospholipides du sous-produit laitier. L'invention concerne également des produits obtenus par ce procédé.
