Abstract

The present invention relates to the removal of particles and specifically floating particles (26) within a continuous operating food fryer (1) in which food and/or feed products (7) such as meat, vegetarian food, cheese, vegetable products or a combination thereof will be shallow fried, par-fried or deep fried. Frying takes place in a hot fluid-bath (81) within a vessel (11) with a preferred hot fluid temperature in the range of 180-190°C. The products (7) to be fried are transported through the hot fluid-bath (81) from a product-entry side (35) to a product-exit side (36) by conveying means (6).

La présente invention concerne l'élimination de particules et particulièrement de particules flottantes (26) dans une friteuse à fonctionnement continu (1) dans laquelle des produits alimentaires (7), tels que la viande, la nourriture végétarienne, le fromage, les produits d'origine végétale ou une combinaison de ceux-ci, seront légèrement frits, semi-frits ou frits à grande friture. La friture a lieu dans un bain de fluide chaud (81) à l'intérieur d'un récipient (11) à une température de fluide chaud de préférence comprise entre 180 et 190 °C. Les produits (7) à frire sont transportés à travers le bain de fluide chaud (81) depuis un côté entrée de produit (35) jusqu'à un côté sortie de produit (36) par des moyens de transport (6).
