Es ist die Aufgabe der Erfindung, ein expandiertes Lebens- oder Futtermittelextrudat zu schaffen, bei welchem die Bedeutung von Stärke- und/oder Proteinanteilen als wesentliche strukturbildende Ingredienzien entfällt. Erreicht wird dies nach der Erfindung durch ein expandiertes Lebens- oder Futtermittelextrudat, bei welchem das Lebens- oder Futtermittelextrudat als wesentliche strukturbildende Ingredienz einen gelbildenden Ballaststoff und eine kristalline Zutat mit einem Schmelzpunkt kleiner bis gleich 150 Grad Celsius enthält und die übrigen Inhaltsstoffe als Füllstoffe oder nicht expansionsrelevante Inhaltsstoffe enthalten sind.

La présente invention a pour objectif de créer un produit alimentaire extrudé expansé à usage humain ou animal, dans lequel l’importance des fractions d’amidon et/ou de protéines en tant qu’ingrédients structurants essentiels est nulle. À cet effet, l’invention concerne un produit alimentaire extrudé expansé à usage humain ou animal, dans lequel le produit alimentaire extrudé à usage humain ou animal contient, en tant qu’ingrédient structurant essentiel, une fibre alimentaire et un ingrédient cristallin ayant un point de fusion inférieur ou égal à 150 degrés Celsius et les autres ingrédients sont contenus en tant que charges ou ingrédients non expansibles.
