A method for preparation of fermented coffee containing a Pinus koraiensis needle extract according to an embodiment of the present invention comprises: a Pinus koraiensis needle extract preparation step of preparing a Pinus koraiensis needle extract in a hot water extraction manner; a green bean drying step of drying coffee green beans, conducted simultaneously with or optionally prior or subsequent to the Pinus koraiensis needle extract preparation step; a Pinus koraiensis green bean preparation step of absorbing the Pinus koraiensis needle extract into the dried green beans to prepare Pinus koraiensis green beans; a Pinus koraiensis green bean drying step of drying the Pinus koraiensis green beans; and an aging step of aging the dried Pinus koraiensis green beans by multi-step fermentation.

Un procédé de préparation de café fermenté contenant un extrait d'aiguille de Pinus koraiensis selon un mode de réalisation de la présente invention comprend : une étape de préparation d'extrait d'aiguille de Pinus koraiensis consistant à préparer un extrait d'aiguille de Pinus koraiensis par extraction à l'eau chaude ; une étape de séchage de grains verts consistant à sécher des grains verts de café, mis en œuvre simultanément avec ou éventuellement avant ou après l'étape de préparation d'extrait d'aiguille de Pinus koraiensis ; une étape de préparation de grains verts de Pinus koraiensis consistant à absorber l'extrait d'aiguille de Pinus koraiensis dans les grains verts séchés pour préparer des grains verts de Pinus koraiensis ; une étape de séchage de grains verts de Pinus koraiensis consistant à sécher les grains verts de Pinus koraiensis ; et une étape de vieillissement consistant à vieillir les grains verts de Pinus koraiensis séchés par fermentation en plusieurs étapes.

본 발명의 실시예에 따른 잣잎 추출액이 함유된 발효 커피 제조 방법은, 열탕 추출 방식에 의해서 잣잎 추출액을 제조하는 잣잎 추출액 제조 단계와, 상기 잣잎 추출액 제조 단계와 동시에 이루어지거나 전후에 선택적으로 실행되며, 커피 생두를 건조시키는 생두 건조 단계와, 건조된 상기 생두에 상기 잣잎 추출액을 흡습시켜 잣생두를 제조하는 잣생두 제조 단계와, 상기 잣생두를 건조하는 잣생두 건조 단계와, 건조된 상기 잣생두를 다단계로 발효시켜 숙성시키는 숙성 단계를 포함할 수 있다.
