Provided is a liquid coffee extract that exhibits an enhanced coffee-specific aroma and reduced off-flavors. The ratio (A)/(B) for the liquid coffee extract between (A) the peak area ratio for 2,3-butanedione and (B) the sum of the peak area ratio for guaiacol and 4-ethylguaiacol is adjusted to a certain range. Alternatively, the ratio (a)/(b) for the liquid coffee extract between (a) the concentration (ppb) osf 2,3-butanedione and (b) the total concentration (ppb) of guaiacol and 4-ethylguaiacol is adjusted to a certain range.

L'invention concerne un extrait de café liquide qui présente un arôme spécifique au café amélioré et des arrière-goûts réduits. Le rapport (A)/(B) de l'extrait de café liquide entre (A) le rapport de surface de pic pour le 2,3-butanedione et (B) la somme du rapport de surface de pic pour le gaïacol et le 4-éthylgaïacol est ajusté à une certaine plage.
