Abstract

Provided are an aspergillus oryzae BLCY-006 strain and an application thereof in the preparation of a galactooligosaccharide. The strain produces β-galactosidase, and the enzyme activity can reach 300U/ml after culturing and fermentation, which is more than 50% higher than traditional β-galactosidase activity. The enzyme also has lactose and glucose resistance properties.

La présente invention concerne une souche d'Aspergillus Oryzae BLCY-006 et son application dans la préparation de galacto-oligosaccharide. La souche produit une β-galactosidase, et l'activité enzymatique peut atteindre 300U/ml après mise en culture et fermentation, qui est plus de 50% plus élevée que l'activité de β-galactosidase classique. L'enzyme présente également des propriétés de résistance au lactose et au glucose.
