The present invention relates to a multiple emulsion comprising or consisting of P1/0/W2, wherein P1 is an aqueous phase forming droplets or a gas phase forming bubbles, said droplets or bubbles being dispersed in O thereby forming P1/O, wherein O is an oily phase comprising crystals, wherein W2 is an aqueous phase comprising at least one hydrophilic surfactant, wherein P1/O globules are formed in W2, wherein said oily phase O comprises at least 90%, preferably at least 92%, and even preferably at least 95%, by mass of triglycerides with respect to the mass of the O phase. The present invention relates to a process for preparing such multiple emulsion and applications thereof. Food, cosmetic and pharmaceutical compositions as well as a packaging containing a composition are claimed.

La présente invention concerne une émulsion multiple qui comprend P1/0/W2, ou en constituée, P1 étant une phase aqueuse qui forme des gouttelettes ou une phase gazeuse qui forme des bulles, lesdites gouttelettes ou bulles étant dispersées dans O, formant ainsi P1/O, O étant une phase huileuse qui comprend des cristaux, W2 étant une phase aqueuse qui comprend au moins un tensioactif hydrophile, des globules de P1/O étant formés dans W2, ladite phase huileuse O comprenant au moins 90 %, de préférence au moins 92 %, et même de préférence au moins 95 %, en masse de triglycérides par rapport à la masse de la phase O. La présente invention concerne un procédé de préparation d'une telle émulsion multiple et ses applications. L'invention concerne également des compositions alimentaires, cosmétiques et pharmaceutiques ainsi qu'un conditionnement qui contenant une composition.
