The present invention relates to a composition and a product which are used when cooking food containing carbohydrates and proteins as main ingredients, when cooking processed food such as ramen, when preparing vegetable protein food such as tofu, or when administrating alcoholic beverages, coffee, tea, beverages and the like, so as to increase the elasticity, texture or taste of prepared or cooked food, thereby improving the flavor thereof.

La présente invention concerne une composition et un produit qui sont utilisés lors de la cuisson d'aliments contenant des glucides et des protéines en tant qu'ingrédients principaux, lors de la cuisson d'aliments transformés tels que des ramen, lors de la préparation d'aliments protéiques végétaux tels que du tofu, ou lors de l'utilisation de boissons alcoolisées, de café, de thé, de boissons et analogues, de façon à augmenter l'élasticité, la texture ou le goût d'aliments préparés ou cuits, améliorant ainsi leur arôme.
