Abstract

The current invention relates to a free-flowing cacao pulp powder obtainable from cacao pulp material, wherein said cacao pulp material is fresh cacao pulp, cacao pulp juice, cacao pulp concentrate or any mixture thereof,characterized by a moisture content less than 8 wt%, preferably less than 5 wt%, most preferably less than 3 wt%.The invention relates to a cacao pulp juice, obtainable from fresh cacao pulp substantially devoid from cacao pod husks and cacao beans, characterized by a Brix value of 10-35. The invention relates to a method for producing cacao pulp juice, from fresh cacao pulp substantially devoid from cacao pod husks and cacao beans. In another aspect, the invention relates to a method for obtaining a free- flowing cacao pulp derived powder from cacao pulp material.

La présente invention concerne une poudre de pulpe de cacao non agglomérée pouvant être obtenue à partir de matière de pulpe de cacao, ladite matière de pulpe de cacao étant de la pulpe de cacao fraîche, un jus de pulpe de cacao, un concentré de pulpe de cacao ou tout mélange de ceux-ci, caractérisée par une teneur en humidité inférieure à 8 % en poids, de préférence inférieure à 5 % en poids, idéalement inférieure à 3 % en poids. L'invention concerne un jus de pulpe de cacao pouvant être obtenu à partir de pulpe de cacao fraîche sensiblement dépourvue de cosses de cabosse de cacao et de fèves de cacao, caractérisé par une valeur Brix de 10 à 35. L'invention concerne un procédé de production de jus de pulpe de cacao, à partir de pulpe de cacao fraîche sensiblement dépourvue de cosses de cabosse de cacao et de fèves de cacao. Dans un autre aspect, l'invention concerne un procédé d'obtention d'une poudre dérivée de pulpe de cacao non agglomérée à partir de matière de pulpe de cacao.
