Disclosed is a high-purity rice protein powder. The method for preparing the rice protein powder comprises the following steps: (1) pulverizing rice and performing size mixing; (2) performing enzymolysis and filtration; (3) subjecting the rice residue to size mixing and pulverization; (4) adding a composite surfactant; (5) separating out a liquid phase and a heavy phase with a 12-stage rotational flow washing device; (6) adding a complex enzyme agent into the heavy phase to obtain an enzymatic hydrolyzate; and (7) subjecting the enzymatic hydrolyzate to jet sterilization and plate-frame pressure filtration, collecting filter cakes, and performing pneumatic drying and superfine dry pulverization to obtain the high-purity rice protein powder. The present invention uses rice as a raw material and a composite surfactant as a main means for removing fat and cellulose to prepare the high-purity rice protein powder, wherein the product has a high purity, a mild treatment process, small changes in the protein structural properties, a better taste, and a better suspension stability.

L'invention concerne une poudre de protéine de riz très pure. Le procédé de préparation de cette poudre de protéine de riz comprend les étapes suivantes consistant à : (1) pulvériser du riz et effectuer un mélange de tailles ; (2) effectuer une enzymolyse et une filtration ; (3) soumettre le résidu de riz à un mélange de tailles et à une pulvérisation ; (4) ajouter un tensioactif composite ; (5) séparer une phase liquide et une phase lourde avec un dispositif de lavage à écoulement rotationnel à 12 étages ; (6) ajouter un agent enzymatique complexe dans la phase lourde pour obtenir un hydrolysat enzymatique ; et (7) soumettre l'hydrolysat enzymatique à une stérilisation par jet et à une filtration sous pression à cadre et à plaque, collecter les gâteaux de filtration, et effectuer un séchage pneumatique et une pulvérisation sèche superfine pour obtenir la poudre de protéine de riz très pure. La présente invention utilise du riz comme matière première et un tensioactif composite en tant que moyen principal pour éliminer la graisse et la cellulose, afin de préparer la poudre de protéine de riz très pure, ce produit ayant une pureté élevée, étant obtenu par un procédé de traitement doux, présentant des petits changements dans les propriétés structurales de la protéine, ayant un bon goût et une bonne stabilité de suspension.

本发明公开了一种高纯度大米蛋白粉,所述大米蛋白粉的制备方法包括如下步骤:(1)将大米粉碎,调浆;(2)酶解、过滤;(3)大米渣调浆、粉碎;(4)加入复合表面活性剂;(5)12级旋流洗涤装置,分离出液相和重相;(6)重相中加入复合酶剂,制得酶解液;(7)酶解液进行喷射杀菌,板框压滤,收集滤饼,经过气流干燥以及超微干法粉碎,制得所述高纯度大米蛋白粉。本发明以大米为原料,复合表面活性剂为脱脂和脱纤维素的主要手段,制备高纯度大米蛋白粉,产品纯度高,处理工艺温和,蛋白结构性质改变小,口感更佳,悬浮稳定性更好。
