A preparation method for a rice protein peptide, comprising the following steps: (1) rice protein residue paste mixing and sterilisation; (2) crushing; (3) enzymolysis; (4) re-crushing; (5) re-enzymolysis; (6) solid-liquid separation; (7) concentration; (8) film filtration; (9) bactericidal treatment; and (10) spray drying. Performing super-fine crushing and re-enzymolysis on rice protein residue already subjected to enzymolysis can ensure that the enzymes come into full contact with the base material, promoting the efficiency of enzymolysis and the mouthfeel.

Procédé de préparation d'un peptide de protéine de riz comprenant les étapes suivantes : (1) mélange et stérilisation de pâte de résidu de protéine de riz; (2) broyage; (3) enzymolyse; (4) rebroyage; (5) re-enzymolyse; (6) séparation solide-liquide; (7) concentration; (8) filtration à membrane; (9) traitement bactéricide; et (10) séchage par pulvérisation. La réalisation d'un broyage ultra fin et d'une nouvelle enzymolyse sur un résidu de protéine de riz déjà soumis à une enzymolyse permet de s'assurer que les enzymes entrent en contact complet avec le matériau de base, ce qui favorise l'efficacité de l'enzymolyse et de la sensation en bouche.
