Rice protein powder by enzymolysis having minimal granular sensation, a preparation method for the rice protein powder by enzymolysis comprising the following steps: (1) pretreatment of sugar refining rice residues; (2) high-temperature extrusion pretreatment; (3) refining treatment; (4) wet-method crushing; (5) enzymolysis control; (6) enzyme deactivation; (7) micro-jet treatment; (8) spraying and drying; and (9) crushing. The protein content of the rice protein powder by enzymolysis is greater than 80%, the fat content is less than 3%, the moisture content is less than 5%, the nitrogen dissolution index is greater than 30%; and the condition for soluble protein molecular weight distribution is as follows: the proportion having a molecular weight smaller than 2000 Da is greater than 70%.

L’invention concerne une poudre de protéine de riz obtenue par enzymolyse et ayant une sensation granulaire minimale, un procédé de préparation de la poudre de protéine de riz obtenue par enzymolyse comprenant les étapes suivantes : (1) prétraitement de raffinage de résidus de riz avec du sucre ; (2) prétraitement d'extrusion à haute température ; (3) traitement de raffinage ; (4) broyage humide ; (5) régulation d'enzymolyse ; (6) désactivation d'enzyme ; (7) traitement par micro-jet ; (8) pulvérisation et séchage ; et (9) broyage. La teneur en protéines de la poudre de protéine de riz obtenue par enzymolyse est supérieure à 80 %, la teneur en matières grasses est inférieure à 3 %, la teneur en humidité est inférieure à 5 %, l'indice de dissolution d'azote est supérieur à 30 % ; et la condition de polydispersité de la protéine soluble est la suivante : la fraction ayant un poids moléculaire inférieur à 2000 Da est supérieure à 70 %.
