Abstract

Edible tubular casings for meats, such as sausages are described. The casings are comprised of reconstituted collagen combined with natural casing material comprising bovine, porcine or sheep gut, or combinations thereof. Methods for producing the casings by forming a gel consisting of a combination of the natural material and the reconstituted collagen are also described.

L'invention concerne des enveloppes tubulaires comestibles pour des viandes, telles que des saucisses. Les enveloppes sont constituées de collagène reconstitué combiné à une matière pour enveloppe naturelle comprenant des boyaux de bovin, de porc ou de mouton, ou des combinaisons correspondantes. L'invention concerne également des procédés de production des enveloppes par formation d'un gel constitué d'une combinaison de la matière naturelle et du collagène reconstitué.
