This method for producing an extract of red shiso leaves comprises the following step (1). Step (1): Extraction from red shiso leaves to which an acid has been added using water at a pH of 4.0 to 8.0.

L'invention concerne un procédé de production d'un extrait de feuilles de shiso rouge à l'aide duquel, à partir de feuilles de shiso rouge auxquelles un acide a été ajouté, l'acide rosmarinique contenu dans ce dernier peut être collecté à un rendement élevé. Ce procédé de production d'un extrait de feuilles de shiso rouge comprend l'étape (1) suivante consistant : Étape (1) : à extraire à partir de feuilles de shiso rouge auxquelles un acide a été ajouté à l'aide d'eau à un pH compris entre 4,0 et 8,0.
