The present disclosure relates to a method for reducing water consumption during tartaric stabilization of wine by electrodialysis, comprising the following steps: making an aqueous stream comprising a weak organic acid circulate between a tank and an electrodialysis module; feeding the electrodialysis module with a stream of wine to be treated in order for potassium bitartrate or calcium tartrate to pass from the wine to be treated to the aqueous stream that circulates between the tank and the electrodialysis module such that, while the aqueous stream passes through the electrodialysis module, the potassium bitartrate or calcium tartrate initially present in the stream of wine are transferred to the aqueous stream; and discarding the aqueous stream once it reaches a certain point of saturation with potassium bitartrate or calcium tartrate.

La présente invention concerne un procédé pour réduire la consommation d'eau dans la stabilisation tartrique de vin par électrodialyse, comprenant les étapes consistant à : faire passer un courant aqueux renfermant un acide organique faible entre un réservoir et un module d'électrodialyse; alimenter le module d'électrodialyse avec un courant de vin à traiter de manière que le bitartrate de potassium ou le tartrate de calcium passent du vin à traiter au courant aqueux qui circule entre le réservoir et le module d'électrodialyse, de sorte que, pendant le passage du courant aqueux par le module d'électrodialyse, le bitartrate de potassium ou le tartrate de calcium initialement présents dans le courant de vin sont transférés vers un courant aqueux, avec élimination du courant aqueux ayant atteint un point déterminé de saturation de bitartrate de potassium ou de tartrate de calcium.

A presente divulgação diz respeito a um método para reduzir consumo de água na estabilização tartárica de vinho por eletrodiálise, compreendendo os seguintes passos: fazer passar uma corrente aquosa que compreende um ácido orgânico fraco entre um tanque e um módulo de eletrodiálise; alimentar o módulo de eletrodiálise com uma corrente de vinho a tratar de modo a que bitartarato de potássio ou tartarato de cálcio passem do vinho a tratar para a corrente de aquosa que circula entre o tanque e o módulo de eletrodiálise de modo a que, durante a passagem da corrente aquosa pelo módulo de eletrodiálise, o bitartarato de potássio ou tartarato de cálcio inicialmente presentes na corrente de vinho sejam transferidos para a corrente aquosa e descartar a corrente aquosa quando esta atingir um determinado ponto de saturação de bitartarato de potássio ou tartarato de cálcio.
