Abstract

The subject matter of the invention is a gluten-free grain concentrate (GFGC) product and stepwise process to prepare GFGC from the treatment of raw unground wheat germ, is provided which permits said wheat germ to become a food which is the source of biologically active constituents in a cost effective matter. The process results in the direct production of a gluten free grain concentrate that substitutes for other fermented wheat germ products.

L'invention a pour objet un produit concentré de céréale sans gluten (GFGC) et un procédé pas à pas destiné à préparer un GFGC à partir du traitement d'un germe de blé brut non broyé, ce qui permet audit germe de blé de devenir un aliment qui est la source de constituants biologiquement actifs dans une matière économique. Le procédé conduit à la production directe d'un concentré de céréale sans gluten qui remplace d'autres produits de germe de blé fermenté.
