Die vorliegende Erfindung bezieht sich auf Verfahren zur Herstellung einer Hefemasse mit hohem Polyphosphatanteil umfassend der Fermentierung von Hefezellen in einem Orthophosphat-Mangelmedium, Trocknung der Zellen, Überführung und Fermentierung der Zellen in ein Orthophosphat-haltiges Medium, und weiterer Trocknung der Zellen. Die vorliegende Erfindung betrifft ferner Verfahren zur Herstellung von Hefeextrakten mit hohem Polyphosphatanteil, insbesondere in Pasten- oder Pulverform. Zudem umfasst die vorliegende Erfindung Hefemassen und Hefeextrakte mit hohem Polyphosphatanteil, erhältlich durch die erfindungsgemäßen Verfahren.

The present invention relates to methods for producing a yeast mass having a high proportion of polyphosphate, said methods comprising the following steps: fermenting yeast cells in an orthophosphate-deficient medium, drying the cells, transferring and fermenting the cells into an orthophosphate-containing medium, and further drying the cells. The present invention further relates to methods for producing yeast extracts having a high proportion of polyphosphate, more particularly in paste or powder form. The present invention also relates to yeast masses and yeast extracts having a high proportion of polyphosphate which can be obtained using the methods according to the invention.

La présente invention concerne des procédés de fabrication d’une masse de levure à forte teneur en polyphosphates comprenant : la fermentation de cellules de levure dans un milieu déficient en orthophosphates, le séchage des cellules, la transformation et la fermentation des cellules dans un milieu orthophosphaté, et un nouveau séchage des cellules. La présente invention concerne des procédés de fabrication d’extraits de levure à forte teneur en polyphosphates, notamment sous forme pâteuse ou pulvérulente. En outre, la présente invention concerne des masses de levure et des extraits de levure à forte teneur en polyphosphates, aptes à être obtenus par les procédés selon l’invention.
