Abstract

The present invention relates to a spread-type processed food product using foie gras (duck or goose liver) and chicken breast, a composition thereof, and a producing method thereof, and more specifically, to a spread-type processed food product using foie gras and chicken breast in which foie gras and chicken breast are made into a processed food product so as to be easily spread and consumable in the form of a spread like butter or jam on a preferred food, such as bread, and a composition thereof, and a producing method thereof. The fishy and peculiar flavor (off-flavor) of foie gras is effectively removed from the spread-type processed food product, thereby allowing simple and agreeable consumption by people of all ages. In addition, the spread-type processed food product is rich in protein and vitamins, thereby helping the development of growing children's brains and promoting the health of the public by preventing various diseases.

La présente invention concerne un produit alimentaire traité de type à tartiner utilisant du foie gras (foie de canard ou d'oie) et du blanc de poulet, une composition de celui-ci et un procédé de production de celui-ci, et plus spécifiquement un produit alimentaire traité de type à tartiner utilisant du foie gras et du blanc de poulet dans lequel le foie gras et le blanc de poulet sont transformés en un produit alimentaire traité de façon à être facilement tartinés et consommables sous la forme d'une tartinade tel que du beurre ou de la confiture sur un aliment préféré, tel que du pain. L'invention concerne également une composition de celui-ci ainsi qu'un procédé de production de celui-ci. Le goût de poisson et particulier (saveur passée) du foie gras est éliminé efficacement du produit alimentaire traité de type à tartiner, ce qui permet une consommation simple et agréable par des personnes de tous âges. De plus, le produit alimentaire traité de type à tartiner est riche en protéine et en vitamines, contribuant ainsi au développement des cerveaux des enfants en croissance et favorisant la santé du public en empêchant diverses maladies.

본 발명은 푸아그라(foie gras)(오리 간, 거위 간)와 닭 가슴살을 이용한 스프레드 타입의 가공식품, 그 조성물 및 그 제조방법에 관한 것으로, 상세하게는, 푸아그라와 닭 가슴살을 버터나 잼과 같이 선호 식품인 빵 등에 스프레드(spread) 형태로 발라 간편하게 섭취할 수 있도록 가공식품으로 제조하고, 푸아그라의 비린내와 특유한 냄새(이취)를 효과적으로 제거하여 남녀노소 누구나 거부감없이 간편하게 섭취가능하도록 하며, 풍부한 단백질과 각종 비타민의 함유로 인해 성장기 어린이의 두뇌개발과 각종 질병을 예방하여 국민 건강증진을 도모할 수 있는 푸아그라와 닭 가슴살을 이용한 스프레드 타입의 가공식품, 그 조성물 및 그 제조방법에 관한 것이다.
