A method for manufacturing a fraction comprising the proteins lactoferrin and/or lactoperoxidase from a source containing at least one of these proteins wherein the source is selected from the group consisting of milk, colostrum, acid or sweet whey, by means of a chromatographic separation process with a monolithic column having cation exchanger properties, wherein in the separation process a pH gradient or a combined pH and salt gradient elution is employed after loading the source to the column. Further disclosed is a composition of matter comprising lactoferrin having a C value of ˃60%and A value of ˃1%or lactoperoxidase.

L'invention concerne un procédé de fabrication d'une fraction comprenant des protéines de lactoferrine et/ou de lactoperoxydase à partir d'une source contenant au moins une de ces protéines, la source étant choisie dans le groupe constitué par le lait, le colostrum, l'acide ou le lactosérum doux, au moyen d'un procédé de séparation par chromatographie à l'aide d'une colonne monolithique ayant des propriétés d'échangeur de cations, dans le processus de séparation, un gradient de pH ou un pH combiné et une élution de gradient de sel étant utilisés après l'introduction de la source dans la colonne. L'invention concerne en outre une composition de matière comprenant de la lactoferrine ayant une valeur C >60 % et une valeur A >1 % ou de la lactoperoxydase.
