Provided is a method for preparing starch octenyl succinate, comprising: performing jet cooking on pre-emulsion comprising starch, alkali, water, octenyl succinic anhydride, and a low boiling solvent to obtain cooked slurry, and performing enzymatic hydrolysis to obtain the starch octenyl succinate. According to the method, reaction is performed under the condition of jet cooking and the action of high-temperature water vapor, so that intermolecular hydrogen bonds and crystal structures are rapidly destroyed; and due to a remarkable gelatinization process, starch molecular chains are sufficiently swollen, and the amorphous region of the starch is significantly increased. At the same time, the high temperature water vapor may also enable the low boiling solvent in the system to be rapidly removed; the octenyl succinic anhydride is rapidly and irregularly dispersed and separated out in the system, and is in full contact with starch granules for reaction in the high-speed liquid flow state of an ejector, so that the octenyl succinic anhydride undergoes esterification reaction at positions of the starch molecule, and a plurality of sites of the starch are remarkably substituted; and the obtained starch octenyl succinate has relatively high substitution degree and emulsification property.

L'invention concerne un procédé de préparation d'octénylsuccinate d'amidon, consistant à : effectuer une cuisson par jet sur une pré-émulsion comprenant de l'amidon, des alcali, de l'eau, de l'anhydride octénylsuccinique et un solvant à bas point d'ébullition pour obtenir une suspension épaisse cuite et effectuer une hydrolyse enzymatique pour obtenir de l'octénylsuccinate d'amidon. Selon le procédé, une réaction est effectuée dans des conditions de cuisson par jet et sous l'action de vapeur d'eau à haute température, de sorte que les liaisons hydrogène intermoléculaires et les structures cristallines sont rapidement détruites ; et en raison d'un processus de gélatinisation remarquable, les chaînes moléculaires d'amidon sont suffisamment gonflées et la région amorphe de l'amidon est significativement accrue. Simultanément, la vapeur d'eau à haute température peut également permettre d'éliminer rapidement le solvant à bas point d'ébullition du système ; l'anhydride octénylsuccinique est dispersé rapidement et de manière irrégulière et séparé dans le système et est en contact direct avec les granulés d'amidon permettant ainsi une réaction dans l'état d'écoulement liquide à grande vitesse d'un éjecteur, de sorte que l'anhydride octénylsuccinique subit une réaction d'estérification au niveau des positions de la molécule d'amidon et plusieurs sites de l'amidon sont remarquablement substitués ; et l'octénylsuccinate d'amidon obtenu présente un degré de substitution et une propriété d'émulsification relativement élevés.

提供了一种制备辛烯基琥珀酸淀粉酯的方法,将包含淀粉、碱、水、辛烯基琥珀酸酐和低沸溶剂的预乳液喷射蒸煮,得到蒸煮浆料,再进行酶解得到辛烯基琥珀酸淀粉酯。该方法在喷射蒸煮条件、高温水蒸气作用下进行反应,分子间氢键和晶体结构会迅速破坏,由于显著的糊化过程而使得淀粉分子链充分溶胀,淀粉无定形区显著增加。同时,高温水蒸气还会使得体系中低沸溶剂的快速脱去,辛烯基琥珀酸酐在体系中快速的、无规则的分散析出,并在喷射器高速液流状态下,与淀粉颗粒充分接触反应,从而使得辛烯基琥珀酸酐在淀粉分子的各个区位发生酯化反应,使淀粉的多个位点均会发生显著取代,得到辛烯基琥珀酸淀粉酯具有更高的取代度和乳化性能。
