The purpose of the invention is to reproduce the texture of prescribed foodstuff and to easily shape the reproduced item. The present invention pertains to novel foodstuffs (F) wherein the texture of prescribed foodstuffs is reproduced on the basis of food texture data obtained by quantifying the food texture of the prescribed foodstuffs. The foodstuff is characterized in that by heating and/or cooling a mixture in which a plurality of food texture base elements (57b) comprising different food textures are mixed in a prescribed ratio, a desired food texture based on food texture data is reproduced and the foodstuff is manufactured by shaping the mixture into a cube shape.

L'objet de l'invention est de reproduire la texture d'un aliment prescrit et de façonner facilement l'article reproduit. La présente invention concerne de nouvelles denrées alimentaires (F) dans lesquelles la texture des aliments prescrits est reproduite sur la base de données sur la texture alimentaire obtenues par quantification de la texture alimentaire des aliments prescrits. L'aliment est caractérisé par le fait qu'en chauffant et/ou en refroidissant un mélange dans lequel une pluralité d'éléments de base de texture alimentaire (57b) comprenant différentes textures alimentaires sont mélangés dans un rapport prescrit, une texture alimentaire souhaitée sur la base de données de texture alimentaire est reproduite et l'aliment est fabriqué par mise en forme du mélange en cube.

所定食品の食感を再現しつつ、容易に再現物を造形すること。本発明は、所定食品の食感を数値化した食感データに基づいて、前記所定食品の食感を再現した新たな食品(F)に関するものである。食品は、異なる食感を備える複数の食感基本要素(57b)を所定の割合で混合した混合物に加熱及び/又は冷却することで食感データに基づく所望の食感を再現し、混合物をキューブ状に成型して製造されることを特徴とする。
