Improved plant (1 ) for the treatment of vegetable products characterized in that it comprises: - a chamber (2) comprising walls (5, 6, 7) arranged so as to delimit together an internal environment which, during the operation of said plant, is closed and isolated with respect to the external environment, within said chamber (2) where the products (8) to be treated are intended to be positioned, - a lighting apparatus (12) positioned within said chamber (2) and configured so as to emit infrared radiation on the products (8) to be treated intended to be positioned inside the chamber (2), - a ventilation apparatus (17) to circulate the air inside the chamber (2), - a dehumidification apparatus (19) configured to control the humidity conditions inside the chamber (2).

L'invention concerne une installation améliorée (1) pour le traitement de produits végétaux caractérisée en ce qu'elle comprend : - une chambre (2) comprenant des parois (5, 6, 7) disposées de manière à délimiter ensemble un environnement interne qui, lors du fonctionnement de ladite installation, est fermé et isolé par rapport à l'environnement externe, à l'intérieur de ladite chambre (2) où les produits (8) à traiter sont destinés à être positionnés, - un appareil d'éclairage (12) positionné à l'intérieur de ladite chambre (2) et conçu de façon à émettre un rayonnement infrarouge sur les produits (8) à traiter destinés à être positionnés à l'intérieur de la chambre (2), - un appareil de ventilation (17) pour faire circuler l'air à l'intérieur de la chambre (2), - un appareil de déshumidification (19) conçu pour réguler les conditions d'humidité à l'intérieur de la chambre (2).
