Abstract

Processes for machine-peeling shrimp and a system for preparing shrimp for machine peeling. According to the processes, shrimp are frozen— completely through or only their outer surfaces— in a brine solution, thawed, and then peeled in a mechanical peeling machine to remove the shells. The peeling-prep system includes a conveyor system conveying shrimp continuously through a brine freezer and a thawer before peeling.

L'invention concerne des procédés de décorticage mécanique de crevettes et un système de préparation de crevettes pour le décorticage mécanique. Selon les procédés, la crevette est congelée (complètement ou seulement ses surfaces externes) dans une solution de saumure, décongelée, puis décortiquée dans une machine de décorticage mécanique pour en retirer la carapace. Le système de préparation de décorticage comprend un système de transport qui achemine des crevettes de façon continue à travers une étape de congélation en saumure et une étape de décongélation avant le pelage.
