Abstract

Alkyl ether amines are used as foam control compounds in foodstuff processing. The alkyl ether amines can be used at various stages during industrial processing of vegetables, fruits, and plants, such as potatoes and beets. The alkyl ether amines are generally of lower molecular weights and therefore easily transported to the foam layer to break the foam structure. Further, the alkyl ether amines are water soluble and therefore can be readily removed from the food processing system.

L'invention concerne des amines d'éther d'alkyle qui sont utilisées en tant que composés de régulation de mousse dans le traitement de produits alimentaires. Les amines d'éther d'alkyle peuvent être utilisées à divers stades pendant le traitement industriel de légumes, de fruits et de plantes, tels que des pommes de terre et des betteraves. Les amines d'éther d'alkyle sont généralement de poids moléculaires inférieurs et sont par conséquent facilement transportées vers la couche de mousse afin de briser la structure de mousse. En outre, les amines d'éther d'alkyle sont solubles dans l'eau et peuvent par conséquent être facilement éliminées du système de traitement d'aliments.
