The present invention addresses the problem of blending cacao butter into a non-temper type chocolate containing a laurin-based hard butter and thus providing a chocolate-like food having good taste and flavor and high resistance against blooming. A laurin-based hard butter composition that contains a random transesterified fat or oil having an appropriately controlled fatty acid composition.

La présente invention aborde le problème du mélange du beurre de cacao dans un chocolat de type non cuit contenant un beurre dur à base de laurine et fournissant ainsi un aliment de type chocolat ayant un goût et une flaveur satisfaisants et une résistance élevée à l'efflorescence. L'invention concerne une composition de beurre dur à base de laurine qui contient une graisse ou une huile transestérifiée aléatoire ayant une composition d'acide gras contrôlée de manière appropriée.
