Abstract

The application relates to compositions based on maple sap, fruit juice and/or vegetable juice having a high added value. In particular, said compositions have high concentrations in polyphenols, phosphorus, magnesium, calcium and potassium, for example. These concentrations are higher than those in maple syrup made by previous traditional or commercial processes and higher than those in fruit or vegetable juices or syrups. Furthermore, said compositions have an antioxidant effect that is also higher than that in commercial maple syrup made on an industrial or small scale and higher than that in commercial fruit or vegetable juices or syrups. The application also relates to processes for making such compositions.

La présente demande concerne des compositions à base de sève d'érable, de jus de fruits et/ou de jus de légumes ayant une haute valeur ajoutée. Particulièrement, ces compositions ont par exemple de hautes teneurs en polyphénols, phosphore, magnésium, calcium potassium. Ces teneurs sont supérieures aux teneurs observées dans le sirop d'érable produit par les procédés traditionels ou commerciaux utilisés à ce jour de même que les jus ou sirops de fruits ou légumes. De plus ces compositions ont une activité antioxandante qui est également supérieure au sirop d'érable du commerce fait de façon industriel ou artisanal de même que les jus ou sirops de fruits ou légumes commerciaux. La présente demande concerne également les procédés de fabrications de telles compositions
