Abstract:
(EN) The present disclosure provides methods, compositions, apparatuses and kits comprising two or more distant related glucoamylases in mashing having a synergistic effect on the released fermentable DP1 sugar. Increased levels of DP1 being primarily glucose is of high importance for high attenuation brewing applied for brewing low carb or light beers. In some embodiments, the present disclosure provides methods, apparatuses; compositions and kits for the use of two or more glucoamylases to increase the apparent specific activity in the mashing operation.
(FR) La présente invention concerne des procédés, des compositions, des appareils et des kits comprenant deux glucoamylases ou plus apparentées distantes dans le brassage ayant un effet de synergie sur le sucre DP1 fermentescible libéré. Les niveaux accrus de DP1 étant principalement du glucose sont d’une importance élevée pour le brassage à atténuation élevée appliqué au brassage des bières à faible teneur en carbone ou légères. Dans certains modes de réalisation, la présente invention concerne des procédés, des appareils ; des compositions et des kits d’utilisation de deux glucoamylases ou plus pour accroître l’activité spécifique apparente dans l’opération de brassage.
