Abstract:
(EN) The present invention provides a method for preparing a mixture beverage of dutch coffee and fruit, comprising the steps of: providing an extraction apparatus in an extraction chamber sealed from the outside, providing an ozone generator in the extraction chamber, and sterilizing the extraction apparatus while maintaining the inside of the extraction chamber in a sterilized atmosphere by means of ozone to be generated in the ozone generator; preparing ozonated water by means of an ozonated water generator, and supplying the ozonated water to the extraction apparatus; extracting a undiluted dutch coffee solution by means of the extraction apparatus in a state in which the inside of the extraction chamber is maintained in a sterilized atmosphere by means of ozone to be generated in the ozone generator; preparing a dutch coffee mixture beverage by injecting the extracted undiluted dutch coffee solution into a mixer, and mixing a fruit extract, sugar syrup and ozonated water; sterilizing the prepared dutch coffee mixture beverage at 100-150°C for 5-30 seconds; and applying thermal shock to the mixture beverage by quenching the sterilized dutch coffee mixture beverage.
(FR) La présente invention concerne un procédé de préparation d'un mélange à boire à base de café hollandais et de fruit, comprenant les étapes consistant : à fournir un appareil d'extraction dans une chambre d'extraction hermétique à l'extérieur, à fournir un ozoniseur dans la chambre d'extraction, et à stériliser l'appareil d'extraction tout en maintenant l'intérieur de la chambre d'extraction dans une atmosphère stérilisée à l'aide de l'ozone devant être généré dans l'ozoniseur ; à préparer de l'eau ozonée à l'aide d'un générateur d'eau ozonée, et à alimenter l'appareil d'extraction en eau ozonée ; à extraire une solution de café hollandais non diluée à l'aide de l'appareil d'extraction dans un état dans lequel l'intérieur de la chambre d'extraction est maintenu dans une atmosphère stérilisée à l'aide de l'ozone devant être généré dans l'ozoniseur ; à préparer un mélange à boire à base de café hollandais par injection de la solution de café hollandais non diluée extraite dans un mélangeur, et à mélanger un extrait de fruit, du sirop de sucre et l'eau ozonée ; à stériliser le mélange à boire à base de café hollandais préparé à une température de 100 à 150 °C pendant 5 à 30 secondes ; et à appliquer un choc thermique au mélange à boire par trempe de du mélange à boire à base de café hollandais stérilisé.
(KO) 본 발명은 외부와 밀폐된 추출실에 추출기구를 설치하고, 상기 추출실에 오존 발생기를 설치하고 오존 발생기에서 발생되는 오존으로 추출실 내부를 살균분위기를 유지하고 상기 추출기구를 살균하는 단계, 오존수 발생기를 이용하여 오존수를 제조하고, 상기 오존수를 상기 추출기구에 공급하는 단계, 상기 오존 발생기에서 발생되는 오존으로 추출실 내부를 살균 분위기로 유지한 상태에서 상기 추출기구로 더치커피 원액을 추출하는 단계, 추출된 더치커피 원액을 배합기에 투입하고 과일 액기스와 설탕 시럽 및 오존수를 혼합하여 더치커피 혼합 음료를 제조하는 단계, 제조된 더치커피 혼합 음료를 100 ~ 150℃에서 5 ~ 30초간 살균하는 단계, 살균된 더치커피 혼합 음료를 급냉하여 혼합 음료에 열충격을 가하는 단계를 포함하는 더치커피 및 과일 혼합 음료 제조방법을 제공한다.
