Abstract:
(EN) In the method for manufacturing fermented milk according to the present invention, a starting milk material is prepared in a preparation step and, in a lactose decomposition step, at least a portion of lactose contained in the thus prepared starting milk material is decomposed with the use of lactase. After the decomposition of lactose, the starting milk material has a lactose concentration of 2.5 mass% or less relative to the total amount of the starting milk material. Then, a lactic acid bacterium is added to the starting milk material, in which at least a portion of lactose has been decomposed, and the starting milk material containing the lactic acid bacterium added thereto is fermented.
(FR) Selon l'invention, lors d'une étape de préparation, un lait de matière de départ est préparé. Lors d'une étape de dégradation de lactose, au moins une partie d'un lactose contenu dans le lait de matière de départ ainsi préparé, est dégradée au moyen d'une lactase. La concentration en lactose dans le lait de matière de départ dont le lactose est dégradé, est inférieure ou égale à 2,5% en masse de l'ensemble du lait de matière de départ. Un ferment lactique est additionné au lait de matière de départ dont au moins une partie du lactose est dégradée, et le lait de matière de départ auquel est additionné le ferment lactique, est soumis à une fermentation.
