Abstract:
(EN) According to the present invention, a post fermentation-type fermented milk product stored in a container comprises fermented milk as an upper layer and a sauce such as a fruit sauce as a lower layer, wherein the fermented milk product stored in a container is provided such that the sauce does not become swept upward (a portion of the sauce in the lower layer going into the fermented milk in the upper layer), and syneresis does not occur after fermentation and during preservation. A fermented milk product 1 stored in a container 2 and comprising fermented milk 3 as an upper layer and a sauce 4 as a lower layer has a milk fat content of 3.0 wt% or higher. Preferably, the specific gravity of the sauce 4 is greater than that of the fermented milk 3 by at least 0.02. One example of the sauce 4 includes a fruit juice sauce base 4a and fruit flesh 4b.
(FR) La présente invention concerne un produit laitier fermenté de type post-fermentation stocké dans un récipient et comprenant du lait fermenté en tant que couche supérieure et une sauce telle qu'une sauce aux fruits en tant que couche inférieure, le produit laitier fermenté stocké dans un récipient étant fourni de sorte que la sauce ne se propage pas vers le haut (une partie de la sauce dans la couche inférieure entrant dans le lait fermenté dans la couche supérieure), et que la synérèse ne se produise pas après la fermentation et pendant la conservation. Un produit laitier fermenté (1) stocké dans un récipient (2) et comprenant du lait fermenté (3) comme couche supérieure et une sauce (4) comme couche inférieure a une teneur en graisse de lait de 3,0 % en poids ou plus. De préférence, la densité spécifique de la sauce (4) est supérieure d'au moins 0,02 à celle du lait fermenté (3).Un exemple de la sauce (4) comprend une base de sauce à base de jus de fruit (4a) et de la pulpe de fruit (4b).
