Abstract:
(EN) The present invention relates to a method for producing an extract from coffee pulp, which comprises mechanically extracting, filtering and concentrating fresh pulp under conditions of pressure and temperature. The invention also relates to an extract based on coffee pulp, characterised in that it has a total percentage of sugars between 8 and 20%, a percentage of ash less than 20%, insoluble fibre between 0.01 and 1%, soluble fibre between 15 and 40%, moisture less than 20% and caffeine between 0.5 and 5%.
(FR) La présente invention concerne un procédé pour l’élaboration d’un extrait à partir de pulpe de café qui consiste à extraire mécaniquement, filtrer et concentrer la pulpe fraîche dans des conditions de pression et de température. En outre, la présente invention concerne un extrait de pulpe de café caractérisé en ce qu'il présente un pourcentage total en sucres compris entre 8 et 20%, un pourcentage de cendres inférieur à 20%, de fibre insoluble entre 0,01 et 1,00%, de fibre soluble entre 15,0 et 40,0%, d'humidité inférieure à 20% et de caféine entre 0,5 et 5,0%.
(ES) La presente invención divulga un método para la elaboración de un extracto a partir de pulpa de café que comprende extraer mecánicamente, filtrar y concentrar pulpa fresca a 5 condiciones de presión y temperatura. Además reclama la presente invención reclama un extracto a partir de pulpa de café caracterizado por tener un porcentaje total de azúcares entre el 8 y el 20%, un porcentaje de cenizas inferior al 20%, fibra insoluble entre el 0,01 y el 1,00%, fibra soluble entre 15,0 y 40,0%, humedad inferior al 20% y cafeína entre 0,5 y 5,0%.
